There’s a widespread notion that Bengali women love their Chinese food. Now I am not one to give fuel to conjectures like these, but you know what, I think people are on to something with Bengali women and Chinese food! Not only am I an avid Chinese food fanatic, even my mom and grand-mom are sticklers for Chinese! My husband would vouch for this, that of five dine-outs that we have, two or three (depending on how fed up he is with Chinese in that month) end up being oriental cuisines.
In fact, ever since I was a kid, I remember my mother cooking up classic Chinese dishes for me. I even remember an
incident when I was down with jaundice, and was craving for anything Chinese. My mom, being a Mom, decided to take matters in her own ‘chef hands’, and whipped up a very basic Chinese noodle soup, with only salt and pepper, to soothe my ailing liver. I love you Mom!
So, Honey soy chicken – as the name suggests has 3 main ingredients honey, soy and chicken with each adding it’s own unique character to the dish. This recipe of Honey soy chicken is so simple that you can whip it up any time and in bigger batches too! I love recipes which have no/very less chopping and now that I think probably that’s one of the main reasons why I keep making this one so often! Imagine coming back home tired from work and hungry, surely chopping is the last thing on your mind! All you need to do to make this is to mix it, marinate it and then fry it. Yes it’s that simple! The key here, however, is how well you are cooking your chicken. The cooking time should be long enough for the chicken to cook well in the juices and stay tender but not too long enough for the chicken to become hard or the soy and honey marinade to dry up.

Honey Soy chicken is a quick Chinese recipe of chicken cooked in soy honey sauce. This gluten free, sticky honey soy chicken can be pan fried or even baked and I assure you is going to be your favourite soon!
- 450 g Chicken free range medium sized pieces or wings
- 1/2 cup soy sauce
- 1/4 cup honey organic
- 2 chillies finely chopped
- 1 tsp apple cider vinegar
- 1 tbsp sesame oil or extra virgin olive oil
- 1 tsp ginger paste freshly grated
- 3 cloves garlic minced
- 1/2 tsp black pepper ground
- salt to taste
- 1 small spring onion finely chopped (optional, only for garnish)

In a bowl, mix together the honey, chilli sauce, soy sauce, apple cider vinegar and ginger paste and minced garlic. Add the chicken and mix it well. Cover and refrigerate for 30 minutes.

2. Take a skillet and add the sesame or olive oil to it. Now add the marinated chicken mixture to it and add salt and pepper to taste. Fry until the chicken is nice brown in colour.

Do NOT cover and cook (You don't want too much water in the form of steam in your pan.

Keep occasionally turning on both sides to let the chicken cook well in the sauce.

After about 25-30 minutes, keep checking the chicken by piercing with a fork to see if it has cooked well.

Once Chicken is done turn off the heat and sprinkle finely chopped spring onions on top of it.

b) If you want it a little less sweet ore more sweet, increase the portion of chillies or the portion of honey accordingly.
