The super easy Avocado egg salad is all mayo free and perfect for a quick breakfast/lunch. This gluten free salad is super healthy and is paleo and keto friendly too!

Ingredients
  • 1 large avocado
  • 3 eggs hardboiled, peeled and diced
  • 1 medium tomoato finely chopped
  • 1 medium onion finely chopped
  • 1 tbsp lemon juice
  • 1 tbsp coriander finely chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper finely crushed
  • 1/2 tsp paprika powder
Instructions
  1. In a salad bowl, using a fork mash the avocado well. 

  2. Add lemon juice, peeled and diced hard boiled eggs, finely chopped onion ,tomato and chopped coriander.

  3. Finally add salt, paprika powder and black pepper to taste.

Recipe Notes
  1. If you want it spicy, you can add chilli flakes to the dish as well.
