The super easy Avocado egg salad is all mayo free and perfect for a quick breakfast/lunch. This gluten free salad is super healthy and is paleo and keto friendly too!
In a salad bowl, using a fork mash the avocado well.
Add lemon juice, peeled and diced hard boiled eggs, finely chopped onion ,tomato and chopped coriander.
Finally add salt, paprika powder and black pepper to taste.
