Okay, so my Instagram feed is flooded with all sorts of mouth watering images of all kinds of avocados – on toast, with runny eggs and the viral images of meticulously cut and arranged avocados which can all be such a treat to the foodgasm-hungry eyes! While I have been experimenting so much with avocados myself, I wasn’t sure what all this fuss with the Avocado egg salad was all about? That was until I tried it myself!
If you are on a look out for quick healthy breakfast/brunch/lunch ideas, you need to get on this avocado egg salad bandwagon too! There is so much you can customize with this Avocado egg salad recipe to suit your taste buds, that the options are endless.
But before I go further, let me tell you – I love mayo/mayonnaise and have grown up eating it!!! But it is also one of those things I am trying to consciously avoid for quite some time now. I have been looking for healthier alternatives in my meals and mayo is somewhere really down on that list. I have realized that replacing mayo with greek yoghurt or avocados in recipes not only ups the nutrition macros a notch higher, but also lets you enjoy your meals without feeling guilty about it!

Why should you switch to Avocados? Why are Avocados good for you?
Avocado or butter fruit is majorly made of fats. That means they are not good for health right? No, wrong. They are made of good fats which your body needs. While you can get tons of research online to bolster the goodness of Avocados, the most powerful reason of them all is the fact that Avocados have high content of healthy mono saturated fatty acids (MUFA) in simple terms ‘Heart healthy fats’ which are very good for your body.
So here I am jumping on the bandwagon with my very own version of Avocado Egg salad without the Mayo but with the real goodness of avocado’s intact. My husband funnily calls it the ‘Egg Guac’ or ‘Egg Guacamole’ 🙂

- 1 large avocado
- 3 eggs hardboiled, peeled and diced
- 1 medium tomoato finely chopped
- 1 medium onion finely chopped
- 1 tbsp lemon juice
- 1 tbsp coriander finely chopped
- 1/2 tsp salt
- 1/2 tsp black pepper finely crushed
- 1/2 tsp paprika powder
In a salad bowl, using a fork mash the avocado well.
Add lemon juice, peeled and diced hard boiled eggs, finely chopped onion ,tomato and chopped coriander.
Finally add salt, paprika powder and black pepper to taste.
- If you want it spicy, you can add chilli flakes to the dish as well.
