This one skillet creamy garlic chicken with broccoli is going to be your new favourite! Keto-friendly and gluten-free, this is a super easy chicken dinner recipe!
Picture this – you have spent a long, hard day at work – solving problems, debating with people, almost snatching someone’s eyeballs cuz they never listen to you! Sounds like a tough day, right? Now picture you coming back to your home sweet home at 9PM in the evening, you and your spouse are so hungry, you have started to see multi-colored stars, and are two seconds away from fainting. Why am I talking in hyperbole about being hungry, you ask? Well, I experienced exactly this a few days back, and that led to me trying this quick, easy dish out, and save our souls!
Originally, I have always made a cheesier and more creamier version of this but recently a friend called asking for some keto recipes and I pounced at the opportunity to develop a recipe for her. I decided to cutdown on the cheese, make it in ghee and instead add on the broccoli, making the macros perfect for high fat (good fats) and low carb goals (Total Fat 21.7g Total Fat 21.7g Total Carbohydrate 7.5g Protein 34.5g).
Why broccoli out of all the vegetables? As broccoli is a great low carb and high fibre vegetable super suited for a Keto-friendly diet plus is full of nutrients, I decided to go with it. But if you hate broccoli (Ya, I hear you!), you can swap it for carrots, zucchini and a variety of vegetables. In fact why swap? You can go ahead and add more vegetables to the sauce, and make it more zesty!
As a side dish to go along with this, the possibilities are endless! You can have it with:
warm quinoa salad
cold salad with class vinaigrette dressing
boiled vegetables
brown rice/ white rice
garlic bread/ regular bread
couscous

- 2 skinless chicken breasts OR thighs
- 1/3 cup chicken broth
- 1/2 cup heavy cream
- 1 tbsp ghee / butter
- 1/2 lemon
- 5 garlic cloves (minced)
- 1/2 cup broccoli florets chopped
- 1/2 tsp cracked black pepper
- 1/2 tsp chilli flakes OR paprika powder
- 1/2 tsp oregano powder
- kosher salt/ sea salt to taste

Marinate the chicken breasts in lemon juice and half of the minced garlic for at least 15 minutes.

In a skillet, add ghee OR butter and add the marinated chicken and fry the chicken for 7-8 minutes on both the sides. Prick and check if chicken is done. Remove the chicken.

In the same skillet, add the remaining minced garlic and fry for 30 seconds. On low heat add the chicken broth, cream, salt, pepper, paprika powder/ chilli flakes and oregano powder and let the sauce thicken for 5 minutes.

Add the broccoli florets and chicken to the sauce and let it cook for another 10 minutes.

Check for salt and finally turn off the heat and sprinkle a dash of oregano powder. Serve hot with your choice of side.
- You can replace chicken breasts or chicken thighs with boneless chicken as well.
- If you don't have stock of chicken broth, you can use water also.
- The more you marinate the chicken, the better the flavour of garlic infuses into the chicken.
- You can also add parmesan cheese to the sauce to make it thick and cheesy.
